Perfect Apple Pie Filling

(Better Homes and Gardens)
Makes enough for one pie.

6-8 (6 c) tart apples (Granny Smith)
3/4 c sugar
2 TBsp flour or tapioca (I like tapioca)
1 tsp. ground cinnamon
dash nutmeg (optional)
2 TBsp butter.

Combine sugar, flour or tapioca, cinnamon and nutmeg. Add sliced apples and stir. Pour into pie shell and dot with butter. Seal edges. Make slits on top of crust for steam to escape. Sprinkle shell with a little sugar. Bake at 400 degrees for about 45-50 minutes.

If crust is browning too soon, cut a hole in middle of foil and place on top to cover edges of pie the last 10 or 15 minutes if needed.
