Makes 1 loaf
1 beaten egg
1 lb ground beef
20 squares soda crackers
1/4-1/2 tsp salt
1/4 tsp pepper
1-8 oz. can tomato sauce
1/2 finely chopped celery
2-3 TBsp chopped onion.
Put crackers in a bag and beat them with a utensil until crumbs. Beat egg in bowl and mix in beef. Mix in remaining ingredients. Pour into loaf pan. Bake at 350 degrees for 1 1/4 - 1 1/2 hours (depending on if the meat is over 1 lb).
You can bake scrubbed potatoes with the meatloaf at the same time. Be sure you poke them about 4 times each so they don't burst in the oven!
