Baking Powder Biscuits

2 c. white flour ( I use 1 c white flour, 1/2 c wheat flour, 1/2 corn flour)
4 tsp baking powder
1/4 tsp salt
1/2 tsp cream of tartar
2 tsp sugar
1/2 c butter
2/3 c milk.

Mix BP, salt, sugar and cream of tartar into flour with pastry blender. Chop butter with blender in flour mixture until butter is size of little peas. Add milk and knead till just blended (keep dough cool--do not warm too much with your hot hands!). Pat dough onto floured board or countertop until 1/2-3/4 inch thick. Slice into squares with knife (I cut about 4 rows each direction). Pat corners into round edges and place on ungreased cookie sheet. Bake 450 degrees 10 minutes.

I do not keep rolling out dough to make round biscuits because they will get tough.
